Turkey

We used this recipe for the first time on Thanksgiving 2005 and plan to use it again and again.

  1. Soak turkey overnight in brine
  2. Remove turkey from brine, rinse and pat dry. You want to remove any salt on the surface.
  3. Preheat oven to 500°F.
  4. Place turkey on roasting rack in pan. Coat whole bird with canola or corn oil.
  5. Roast on lowest rack of oven at 500°F for 30 minutes.
  6. Remove from oven and cover breast with aluminum foil, insert thermometer into thickest part of the breast and return to oven.
  7. Cook at 350° F until turkey reaches 160° F. (I read that brined Turkey need only be cooked to 150° F.)
  8. A 15 lb turkey should cook 2 to 2½ hours.
  9. Let stand for 15 minutes before carving.
