Turkey
We used this recipe for the first time on Thanksgiving 2005 and plan to use it again and again.
Ingredients

- Poultry Brine
Instructions
- Soak turkey overnight in brine
- Remove turkey from brine, rinse and pat dry. You want to remove any salt on the surface.
- Preheat oven to 500°F.
- Place turkey on roasting rack in pan. Coat whole bird with canola or corn oil.
- Roast on lowest rack of oven at 500°F for 30 minutes.
- Remove from oven and cover breast with aluminum foil, insert thermometer into thickest part of the breast and return to oven.
- Cook at 350° F until turkey reaches 160° F. (I read that brined Turkey need only be cooked to 150° F.)
- A 15 lb turkey should cook 2 to 2½ hours.
- Let stand for 15 minutes before carving.
