Panang Pork Curry - Kind of...
This is something I made up one night when we had some leftover pork roast. It tastes similar to panang curry.
Ingredients
- 1 ½ lbs pork roast (1 lb would probably be okay)
- ¼ cup virgin olive oil
- 1 small green bell pepper
- ¼ red onion
- 2 stems of green onion
- 2 cloves of garlic
- 2 tbsp garman masala
- 2 tbsp curry powder
- ½ tsp red pepper
- 2 cans coconut milk
- 2 tbsp tamarind paste
Instructions
- Cut pork into small strips.
- Add olive oil, bell pepper, red onion, green onion, and garlic to pot.
- Saute on medium heat for ten minutes then add pork.
- Add garman masala, curry powder, red pepper and cook on low heat for another ten minutes.
- Mix in coconut milk and tamarind paste and simmer for another twenty minutes on low heat.
- Eat over rice.
