Smoked Meat Loaf

I use a propane, water smoker. If you are not familiar with one, it has a pan of water between the heat source (they can be propane, electric or charcoal) and the food. Chunks of wood are placed directly above the heat source to create smoke. The water keeps the food from drying out when you smoke food for many hours. I love it!

I cook these for just Glady and myself. Freeze two of them in FoodSaver, vacuum bags. When ready to eat, I just boil the bag for 40 minutes, open and eat. Tastes like it just came off the smoker.

  1. Break up meats and mix together in a large bowl.
  2. Mix bread crumbs into meat.
  3. Chop onions, bell peppers and celery and add to mix.
  4. Mix spices and add in.
  5. Beat eggs and blend in.
  6. Form three loaves with the mixture.
  7. Put loaves in shallow aluminum pans (about six inch square pans). Poke holes in the bottom of the pans with an ice pick. Don't know if this really helps any.
  8. Place pans in smoker.
  9. Fill water pan, add apple wood chips, or whatever you like. Smoke for about 2½ hours.
  10. If you want to cook in an oven, cook for 90 minutes to 2 hours at 375F.
