Dried Cherry Sauce

I use this on smoked ducks or pork dishes.

Instructions

  1. Boil the wine, cherries, ginger and garlic until wine is reduced to about 25% from amount at the start.
  2. Add chicken stock and reduce about 50%.
  3. Blend the mixture in an electric blender until smooth.
  4. Put mixture back in the pan on medium heat.
  5. Stir in the butter, salt and pepper.
  6. Keep warm until ready to use.
