Dried Cherry Sauce
I use this on smoked ducks or pork dishes.
Ingredients
- 1 cup of dry red wine
- 1 cup of chicken stock
- 1 cup of dried bing cherries
- 1 tbsp ginger
- 4 cloves of chopped garlic
- 1 tsp black pepper
- a little salt
- 2 tbsp butter
Instructions
- Boil the wine, cherries, ginger and garlic until wine is reduced to about 25% from amount at the start.
- Add chicken stock and reduce about 50%.
- Blend the mixture in an electric blender until smooth.
- Put mixture back in the pan on medium heat.
- Stir in the butter, salt and pepper.
- Keep warm until ready to use.
