Banana Pudding
This is actually the recipe off the Nabisco Nilla Wafer box except that I double the custard part. Another twist... I sometimes slice the bananas first and soak them in three shots of Meyer's Dark Rum while making the custard.
Ingredients
- 1 box Nabisco Nilla Wafers
- 3/4 cup all-purpose flour
- 1 1/2 cups sugar
- 6 separated egg yolks
- 4 cups milk
- 1 tbsp vanilla extract
- dash salt
- 5 large, ripe bananas
Instructions
- Mix 1 cup sugar, 3/4 cup of flour and dash of salt in double boiler.
- Blend in 6 egg yolks and milk.
- Cook, uncovered, over boiling water. Stir constantly for 10 or 12 minutes or until thickened.
- Remove from heat; stir in one tablespoon of vanilla extract. (Someone recommended adding a half stick of butter at this point. I've never tried it.)
- Spread a small amount of custard in the bottom of a casserole dish. Put in a layer of wafers and a layer of banana. Pour in a layer of custard, about 1/3 of what's left. Repeat for two more layers.
- (I don't make meringue or bake it. I stop here and put it in the refrigerator.)
- Beat egg whites until soft peaks form. Gradually add remaining 1/2 cup of sugar. Beat until stiff. Spread over top of pudding.
- Bake at 350°F for 10 to 20 minutes, until topping is brown.
