Cherry Vanilla Cookies With White Chocolate Chips

This was my first attempt at making cookies.
Yield: 3 dozen cookies

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper or silicone baking mat and set aside.
  3. Using a mixer, beat together butter and sugars until creamy.
  4. Add in pudding mix, eggs, and vanilla extract to sugar/butter mix.
  5. In a medium bowl, whisk together the flour, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients and mix until just combined.
  7. Stir in the dried cherries and white chocolate chips. I chopped the dried cherries into halves or quarters.
  8. Drop cookie dough by rounded tablespoons onto prepared baking sheet. I used a scoop. Looks like a melon baller/ice cream scoop.
  9. Bake for 10-12 minutes, or until slight golden and set.
  10. Remove cookies from oven and let cool on baking sheet for two minutes.
  11. Transfer to a cooling rack and cool completely.
