Chili

I used to just add my spices visually while cooking. As my vision got worse, I bought a food scale and measure my spices by weight. I actually use grams. I converted them to ounces here and used 30 grams per ounce to round things out. Actually, 1 oz = 28.34 g

  1. Mix dry seasonings in a plastic bag and shake to distribute evenly.
  2. Put a little cooking oil in the bottom of pot. Add chopped onions and peppers. Add about 1/4 of spice mix to vegetables. Cook on low heat for 15 minutes.
  3. While vegetables are simmering, break up ground meat in a large bowl layering the meat and and the rest of the spice mix. Set aside.
  4. When vegetables are done, slowly add meat a little at a time to pot as it browns.
  5. Add tomatoes and yellow mustard.
  6. Simmer an hour or so.
