Chili
I used to just add my spices visually while cooking. As my vision got worse, I bought a food scale and measure my spices by weight. I actually use grams. I converted them to ounces here and used 30 grams per ounce to round things out. Actually, 1 oz = 28.34 g
Ingredients
- 3 lbs of lean ground meat
- 2 ozs (60g) of McCormick's chili powder
- 2 ozs (60g) of dry mustard
- 2 ozs (60g) of cumin
- 1 oz (30g) of black pepper
- 1 oz (30g) of salt
- 3 medium yellow onions
- 2 large bell peppers
- 4 jalapeno peppers
- 1 can of diced tomatoes
- 1/3 cup of French's yellow mustard
Instructions
- Mix dry seasonings in a plastic bag and shake to distribute evenly.
- Put a little cooking oil in the bottom of pot. Add chopped onions and peppers. Add about 1/4 of spice mix to vegetables. Cook on low heat for 15 minutes.
- While vegetables are simmering, break up ground meat in a large bowl layering the meat and and the rest of the spice mix. Set aside.
- When vegetables are done, slowly add meat a little at a time to pot as it browns.
- Add tomatoes and yellow mustard.
- Simmer an hour or so.
