Mashed Cauliflower
Mashed potato substitute.
Ingredients
- 1 large head cauliflower, or size to fit your food processor
- 2 tablespoon cream cheese, softened
- 3/4 teaspoon minced garlic
- 1/4 teaspoon chicken bullion
- 1/4 teaspoon freshly ground black pepper
- Olive oil or butter.
Instructions
- Heat a pot of water to a boil.
- Clean and cut cauliflower into small pieces.
- Cook in boiling water for about 9 minutes, or until well done.
- Drain well. Do not let cool. Pat cooked cauliflower very dry between several layers of paper towels.
- In a food processor, puree the hot cauliflower with the cream cheese, garlic, bullion and pepper until almost smooth.
- Pour warm olive oil or put pads of butter on each serving.
It took several minutes in our food processor to get it smooth. Probably varies with machine and doneness of the cauliflower.
