Muffuletta Olive Spread
Used on New Orleans Muffaletta Sandwiches or hors d’oeuvres.(pronounced “muf-uh-lah’-ta”—just ask Larry)

This spread and sandwich was invented at the Central Grocery on Decatur Street in New Orleans. It is not far from Jackson Square. - Larry
Ingredients
- 1 clove garlic
- 1 slice onion
- 1/2 cup green pimento-stuffed olives
- 1/2 cup pitted Calamata olives from the Deli. Not salted/dried.
- 1/4 cup pickled cauliflower mix (in pickle section of market)
- 1 Tbs. capers
- 1 Tbsp chopped green pepper
- 1 Tbsp dry parsley
- 1/2 tsp each: salt, celery seed and freshly ground pepper.
- 1 Tbs. dried oregano
- 3/4 cup olive oil
Instructions
- Cut deli Calamata olives in half to check for pits.
- With food processor running, drop in garlic to mince, then the onion slice, then green pepper.
- Add all other ingredients and process, but not too fine.
- Put spread in a jar, pack lightly, and add more olive oil to fill the crevices and cover the top of the spread.
- Can be kept about a month in the refrigerator.
- I have a large food processor, so I double the above recipe, put some spread in small jars to give as gifts.
- Doubling the recipe fills three 8 oz jars.
