Spicy English Muffin Casserole

  1. Brown, drain, cool and crumble pork sausage.
  2. Place muffins, cut side down, in a buttered 9x13 baking dish.
  3. In another bowl, whisk together eggs, milk, onion, green pepper, mustard, salt and pepper.
  4. Fold sausage and 1/2 cup of cheese (and optional spinach) into egg mixture. (Reserve remaining cheese.)
  5. Pour egg mixture over muffins. (The muffins will float.)
  6. Cover and refrigerate overnight or at least 12 hours.
  7. Remove casserole from the refrigerator, top with remaining cheese.
  8. Bake at 350° F for 55 to 65 minutes or until set.
  9. Serves 6 to 8.
