Spicy English Muffin Casserole
Ingredients
- 1 lb. hot pork sausage
- 3 English muffins, cut in halves
- 2 cups grated sharp Cheddar cheese
- 8 eggs
- 2 1/2 cups milk
- 2 Tbsp. chopped onions
- 4 Tbsp. Chopped green pepper
- 2 tsp. Prepared mustard
- 1/2 tsp. Salt
- 1/4 tsp black pepper
- Optional: 1/2 package chopped spinach, wrung dry
Instructions
- Brown, drain, cool and crumble pork sausage.
- Place muffins, cut side down, in a buttered 9x13 baking dish.
- In another bowl, whisk together eggs, milk, onion, green pepper, mustard, salt and pepper.
- Fold sausage and 1/2 cup of cheese (and optional spinach) into egg mixture. (Reserve remaining cheese.)
- Pour egg mixture over muffins. (The muffins will float.)
- Cover and refrigerate overnight or at least 12 hours.
- Remove casserole from the refrigerator, top with remaining cheese.
- Bake at 350° F for 55 to 65 minutes or until set.
- Serves 6 to 8.
