Indian Spiced Lentil Soup

Like many of my recipes, I rely on my Cuisinart.

  1. Heat butter in soup pot.
  2. With food processor running, drop in garlic. Stop.
  3. Open and add quartered onions. Chop.
  4. Put onions and garlic in heated soup pot.
  5. Chop carrots in food processor. Add to pot and cook 4 minutes until soft.
  6. Add seasonings and cook 1 minute.
  7. Stir in broth and lentils, bring to a boil, cover and cook 20 minutes.
  8. Stir in tomatoes, rice, coconut milk, salt and pepper.
  9. Cover and simmer 20 minutes.
  10. Stir in Swiss chard until softened. This is very thick, thin it with more broth.
  11. Serve with a dollop of yogurt and nan.
  12. Serves 8. Freezes well.
