Indian Spiced Lentil Soup
Like many of my recipes, I rely on my Cuisinart.
Ingredients
- 4 Tbsp. butter
- 2 cloves garlic
- 2 large onions
- 3 medium carrots
- 1 1/2 tsp. garam masala
- 1 ½ tsp. cumin
- 1 tsp. curry powder
- 5 cups vegetable broth
- 1 cup lentils, picked over and rinsed
- 1 large can fire roasted tomatoes
- 1 cup jasmine or basmati rice
- 1 15 oz. can unsweetened coconut milk
- 1 tsp. salt, ½ tsp. pepper
- 1 lb. Swiss chard, stems trimmed, sliced into thin strips.
Instructions
- Heat butter in soup pot.
- With food processor running, drop in garlic. Stop.
- Open and add quartered onions. Chop.
- Put onions and garlic in heated soup pot.
- Chop carrots in food processor. Add to pot and cook 4 minutes until soft.
- Add seasonings and cook 1 minute.
- Stir in broth and lentils, bring to a boil, cover and cook 20 minutes.
- Stir in tomatoes, rice, coconut milk, salt and pepper.
- Cover and simmer 20 minutes.
- Stir in Swiss chard until softened. This is very thick, thin it with more broth.
- Serve with a dollop of yogurt and nan.
- Serves 8. Freezes well.
