Granola
I buy the oats at Costco and dried fruit from the bins at the store to save $$. I eat this with fresh fruit, unsweetened plain yogurt and milk and sweeten with Splenda. Sticks to your ribs! Good to grab a handful when you have munchies, too.
Ingredients
- 8 cups old fashioned oats (requires the large box) NOT instant oats
- 1/2 cup plus 1 tablespoon olive oil
- 1 tablespoon vanilla
- 1/2 cup plus 1 tablespoon honey or REAL maple syrup
- 1/3 cup each walnuts, almonds and pecans, chopped
- 1/3 cup each raisins, cranberries, blueberries or other dried fruit
- 3/4 cup coconut
Instructions
- Preheat oven to 325° F.
- Combine oats, olive oil, vanilla and honey/maple syrup in your largest baking pan 13 x 15 or so, or two smaller pans.
- Bake 10 minutes.
- Stir and add nuts.
- Bake another 30 minutes, stirring every 10 minutes.
- Cool and add fruits.
- Store in airtight container.
