Glady's Pecan Refrigerator Cookies
I double this recipe and freeze one roll.
Ingredients
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 3/4 tsp. salt
- 1/2 cup (cube) unsalted butter, softened to room temp
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 3 tsp vanilla
- 1/2 cup finely chopped pecans
Instructions
- Sift flour, soda, salt into a bowl.
- In another, larger bowl, mix butter, sugar, eggs and vanilla with electric mixer for 5 minutes or more until sugar is completely dissolved and the mixture is very fluffy.
- Gradually mix in flour and nuts.
- Turn dough onto a large piece of cling wrap, and form into a roll about 1 1/2 inches in diameter.
- Refrigerate a couple of hours before baking, or store up to a week.
- To bake, cut into 1/8 or 1/4 inch slices. Bake on ungreased (or silcon) cookie sheet, 10 minutes at 375° F, until very slightly browned.
