Glady's Pecan Refrigerator Cookies

I double this recipe and freeze one roll.

  1. Sift flour, soda, salt into a bowl.
  2. In another, larger bowl, mix butter, sugar, eggs and vanilla with electric mixer for 5 minutes or more until sugar is completely dissolved and the mixture is very fluffy.
  3. Gradually mix in flour and nuts.
  4. Turn dough onto a large piece of cling wrap, and form into a roll about 1 1/2 inches in diameter.
  5. Refrigerate a couple of hours before baking, or store up to a week.
  6. To bake, cut into 1/8 or 1/4 inch slices. Bake on ungreased (or silcon) cookie sheet, 10 minutes at 375° F, until very slightly browned.
  7. Makes 5 Doz.
