Curry Powder

Ingredients
- 1 tsp cardamom seeds
- 4 tsp Coriander seeds
- 1 tsp mustard seeds
- 2 tsp fenugreek seeds
- 1 tsp cayenne
- 2 tsp whole peppercorns
- 1 tsp ground ginger
- 2 tsp turmeric
Instructions
- Toast all ingredients in a small pan over medium heat, shaking pan often, until fragrant, about 5 minutes.
- Cool.
- Grind in small grinder or with mortar and pestle.
- Fills a spice jar.
- Keeps 3-4 months.
- I store mine in the freezer.
- This is quite mild. Add more red pepper to your dish to make it hotter.
- Options:
- For a sweeter curry powder, add to the above before toasting:
- ¼ inch of thin cinnamon stick, broken up
- 5 whole cloves
- After toasting, add:
- ¼ tsp mace
- ¼ tsp nutmeg
