Curried Squash Soup

Instructions

  1. Melt butter, add onions and curry powder. Cook covered over low heat until onions are very tender, about 25 minutes.
  2. Meanwhile, peel and seed squash and apples, chop.
  3. Add stock, squash and apples. Bring to a boil, and cook until very tender, 25 minutes or more.
  4. Pour soup through a strainer and process solids in a food processor.
  5. Return soup to the pot, add apple juice and additional broth.
  6. Season with salt and pepper.
