Curried Squash Soup
Glady's family loves this recipe!
Ingredients
- 4 tbsp butter
- 3 cups finely chopped yellow onions
- 5 tsp good curry powder
- 3 lb butternut squash
- 2 Granny Smith apples
- 3 cups chicken or vegetarian broth
- Reserve until last:
- 1 cup apple juice
- 2 more cups broth
Instructions
- Melt butter, add onions and curry powder. Cook covered over low heat until onions are very tender, about 25 minutes.
- Meanwhile, peel and seed squash and apples, chop.
- Add stock, squash and apples. Bring to a boil, and cook until very tender, 25 minutes or more.
- Pour soup through a strainer and process solids in a food processor.
- Return soup to the pot, add apple juice and additional broth.
- Season with salt and pepper.
