Crab Meat Alfredo
This recipe is EASY and absolutely delectable! (NOT low fat.) Serves four.
Ingredients
- 2 cubes unsalted butter (1 lb)
- 1 cup half and half
- 2 cups freshly grated Parmesan Regginio (?) BEST grade Parmesan
- Pinch nutmeg or parsley (optional)
- 1 lb. can fresh blue or (preferably) fresh king crab
- 4 cups chicken broth
- 1 cup white wine
- 8 oz. (1/2 a one pound box) dried fettuccini.
Instructions
- Prepare sauce.
- In large non-stick frying pan, melt butter over low heat.
- Stir in cream.
- Stir in cheese, still at low heat, whisking frequently.
- Just before serving, add crab just long enough to heat.
- Prepare pasta.
- Heat 4 cups chicken broth and 1 cup white wine in 2 quart or larger saucepan.
- Bring to a boil, and simmer the wine and broth 3 minutes.
- Increase heat to boiling and add 8 oz. (1/2 a one pound box) dried fettuccini.
- Stir noodles constantly, since there is so little boiling liquid.
- Cook about 9 minutes (check at 7) make sure they are not overcooked.
- Drain, and add to cheese/crab mixture.
- Serve with salad and extra Parmesan.
