Many of my recipes make a large quantity. I cook them for large parties and BBQs. Scale them down for smaller servings.

However, I cook the large servings just for Glady and me. I freeze the extra in FoodSaver vacuum bags and bring it out when we don't feel like cooking.

Some shrimp dishes don't taste right without Gulf Of Mexico wild shrimp. I get mine from www.laCrawfish.com . Even shipping to the west coast overnight, they are resonable. Their pricing includes overnight shipping. That makes them look more expensive. When I want original andouille sausage I add Comeaux's Andouille Sausage to the order. They also have excellent frozen, peeled crawfish tails. However, they are expensive. They make great Étouffée!
